A Scoopable Seasonal Cheese

Seasonal cheeses are much like seasonally brewed beer. The cheesemaker decides on a particular type of cheese to create. The artisan then determines the milk characteristics that will bring you the best cheese possible. There's a well-known French cheese, Vacherin Mont d’Or, that's known for its flavor and seasonality.

I've chosen a rock out American version of this cheese with a unique terroir for the pairings on The Tasting Room with Tom Leykis.

Rush Creek Reserve – Autumn Cow's Milk
Uplands Cheese Company – Dodgeville, Wisconsin

Cut the top off this spruce bark covered cheese, spoons in hand at least four of you can experience sensuality with cheese together. Rush Creek Reserve is only made from autumn raw cow's milk where the cows are on 1/2 fresh pasture and 1/2 hay. This makes for a richer fattier milk and is perfect for developing the silky texture and buttery bacony complex flavors of this ultra hedonistic gooey cheese. The depth of flavors of Rush Creek also develop from Uplands' cheese cave where the rind is washed with our microbial friends for perfect ripening. Please take Rush Creek Reserve out of your refrigerator at least 1 hour before serving.
